Bulgur with carrots
Bulgur is yummy, and it tastes even better with carrots! This makes a great light and tasty side dish. Five minutes prep time and the stove does the rest. I’m all for easy and tasty recipes. This is really one of the easiest side dishes out there.
Makes 3 servings
Ingredients:
1 cup coarse bulgur wheat
2 carrots
3-4 Tbsp oil
2 cups water
Ground black pepper
1 tsp salt
Preparation:
1. Place 2-3 Tbsp of oil in a pot, grate the carrot in the large holes of a box grater, sauté for a few minutes, add the bulgur, mix, add water and seasoning.
2. Bring to a boil. Cover and lower the heat. Cook for 15 minutes and leave covered for an additional 15 minutes.
Served with dried tomatoes, mashed potato and meat fritters, mung beans with vegetables, cooked chickpea salad
