Chicken meatballs with sweet potato

These are amazing. So tender, beautiful and tasty. I love making these meatballs for Friday night dinner since everyone loves the amazing sauce. This is a great dish with wonderful flavors.

Ingredients:

350 grams ground chicken breast
150 grams ground beef
1 potato
1 carrot
1 onion
1 tsp minced garlic
1 tsp Moroccan paprika
Pinch of cinnamon
1/2 tsp baking soda
1 Tbsp chicken bouillon
Ground black pepper
Salt (if needed, to taste)

For the sauce:
1 sweet potato
1 carrot
1 medium onion
2 cloves of garlic
2 – 3 cups water
1 tsp flour
1 Tbsp soy sauce
1 Tbsp ketchup
1 Tbsp honey
1 Tbsp Moroccan paprika
1 Tbsp chicken bouillon
Ground black pepper
Salt (if necessary, to taste)

Preparation:

1. To make the meatballs: Coarsely grate the vegetables, add the meat and the other ingredients and mix until well combined. Form meatballs and refrigerate for half an hour.

2. To make the sauce: Heat 4 Tbsp of oil in a pot, dice the onion and sauté until golden. Slice the garlic and sauté until golden. Add the flour and stir until incorporated.

3. Finely dice the carrot and sweet potato and add to the onion. Add the other ingredients and cook for 15 minutes. Add the meatballs to the sauce and cook for around 25 minutes. Gently shake the pot occasionally.

The sauce is fantastic!

Good to know…
You can make this the day before. You can substitute two carrots for the sweet potato. You can also fry or bake the meatballs and then add them to the sauce.
