Dairy free maple cake
I love cakes that are easy to make, especially ones that you can prepare in one bowl with a spoon, and without needing to use any special equipment. This cake takes 5 minutes to prepare and the oven does the rest.
And if I’m feeling particularly lazy then I ask the kids to mix the batter. After 45 minutes there’s a warm fresh cake that smells amazing and tastes like maple syrup.
Heaven! Who needs more than that?!
One 24 cm cake pan or two English cake pans
Ingredients:
4 eggs
250 grams sugar (1+1/4 cups)
120 ml oil (1/2 cup)
480 ml milk or orange juice (2 cups)
350 grams self-raising flour (2.5 cups)
Pinch of salt
Maple syrup
Preparation:
1. Preheat an oven to 180°C.
2. Put all the ingredients in one bowl and mix with a spoon until well combined.
3. Grease the pan and sprinkle some sugar on the bottom and sides. Pour the batter in and bake for around 45 minutes or until the cake is set and golden.
*4. When the cake comes out of the oven, generously drizzle the maple syrup evenly over the top of the cake.
