Large Chocolate Cake

Such a moist and delicious cake that both children and adults adore.
I had such a crazy month. My little princess had a birthday, but not just one. She had a string of birthdays! I call October “the princess’s birthday project” month. Everyone spoils her and buys her gifts, and she just revels in it all, never wanting the month to end.
My job is to make the cake and since I love this recipe so much, it’s the one I picked.

24 cm x 35 cm baking pan

Ingredients:

6 eggs, separated
200 grams sugar (1 cup)
240 ml oil (1 cup)
420 grams flour (3 cups)
3 tsp baking powder
3 cups water
1 cup chocolate drink mix powder (like Nesquik)
1/2 cup cocoa
1/4 cup maple syrup

Chocolate cream:
250 ml whipping cream (or non-dairy substitute)
200 grams bittersweet chocolate

Preparation:

1. Preheat an oven to 180°C.

2. Start by beating the egg whites in a mixer. As soon as they start getting foamy, start adding the sugar slowly, and beat until the stiff peaks stage. Lower the speed of the mixer and add the yolks slowly, one after the other.

3. In a separate bowl, mix the oil, water, cocoa, maple syrup, flour, baking powder, and chocolate drink mix powder into a smooth batter. Slowly add to the beaten egg whites in the mixer while on low speed, until incorporated. The batter will be runny and that’s fine.

4. Pour the batter into a pan and bake for around 45 minutes, and let cool for a few minutes.

*5. Melt the chocolate and cream in the microwave, mix together, and pour evenly over the cake.
