Shakshuka with meatballs

This is fantastic.The meatballs soak up the amazing tomato sauce and it’s just wonderful. This shakshouka makes a great lunch, served with some fresh bread to dunk in the sauce and deliver the meatballs! Isn’t life great?

Ingredients:

250 grams ground meat
1 potato
1 onion
1 tsp minced garlic
1 Tbsp sweet chili sauce
1/2 tsp paprika
1/3 tsp baking soda
1 tsp chicken bouillon
Ground black pepper
Salt

For the sauce:
4 tomatoes
4 eggs
1 onion
1 clove of garlic
1 red pepper
2 – 3 cups water
1 Tbsp tomato paste
1 tsp sugar
1 tsp paprika
1/3 tsp crushed chili flakes
1 Tbsp chicken bouillon
Ground black pepper
Salt

Preparation:

1. To make the meatballs: Add 2 Tbsp oil to a hot pan. Finely chop the onion and sauté until golden. Grate the potato and mix all the ingredients, including the fried onion. Form meatballs and fry on both sides until golden. Set aside.

2. To make the sauce: Fill a pot with water and bring to a boil. Score the tops of each tomato and cook them for around 3 minutes in the boiling water. Drain and peel, and finely chop.

3. Chop the onion and the garlic. Heat a pan with 2 Tbsp of oil and sauté the onion and the garlic. Add the tomatoes and sauté for around 2 minutes. Add the pepper, water and spices. Cook for around 10 minutes on medium heat. Add the meatballs and cook for another 10 minutes.

4. Crack the eggs into the sauce and partially cover the pan. Cook until the eggs are done.
