Sweet potato latkes
So easy and yet so tasty. Who needs anything more? These are your old-fashioned latkes but made with sweet potato instead of regular potatoes. I’m all for variety in life.
Makes 12 latkes
2 medium sweet potatoes
1 onion, grated
3 Tbsp oil
5 Tbsp flour
1 tsp salt
1. Grate the sweet potato and onion and place in a bowl. Add the other ingredients and mix.
2. Make small pancakes with the mixture.
3. Heat 3 Tbsp of oil in a pan and fry the latkes until they are crisp and golden on both sides. Remove from the pan and let drain on a plate lined with paper towels.
*4. Serve with a sour cream dip, which goes really well with these.
Good to know…
You can make these a day before and heat them in the oven before serving. Also great served at room temperature.
