Swiss Chard And Potato fritters

I love fritters of all kinds. I make a huge amount, sometimes of different types so that there’s a nice selection. I put them on a platter on the table and whenever someone passes through the kitchen they snack on a fritter or two.
The best is coming into the kitchen a few hours later and seeing the plate empty! That’s it, my work is done 🙂
By the way, a great method for getting kids to eat is just setting them on the table and disappearing from view. You’ll love these!

Makes 15 fritters

Ingredients:

4 medium potatoes
4 large Swiss chard leaves
1 onion
1 egg
70 grams flour (1/2 cup)
1 tsp minced garlic
1 tsp salt

Preparation:

1. Fill a pot with water and bring to a boil. Cook the potato until fork tender. Remove with a slotted spoon.

2. Chop the Swiss chard and add it to the boiling water for around two minutes, then drain.

3. Sauté the onion until golden and transfer to a plate. Grate the remaining potatoes and add to the onion.

4. Mash the boiled potato and add to the bowl with the other ingredients.

5. Form fritters and fry until golden on both sides. Remove from the pan and place on a plate lined with paper towel.

*6. If you want to bake, not fry: Preheat an oven to 180°C. Line a tray with greased parchment paper and place fritters on the paper. Bake for around 25 minutes or until golden. Don’t try and flip the fritters before the time is up. Flip and bake on the other side for 15 minutes or until golden.

Good to know…
You can make these a day before and heat them in the oven before serving. Also great served at room temperature. Perfect for picnics. The batter cannot be made ahead of time. You can also use beet leaves.
