Amazing Strawberry Mousse

Do you believe in magic? I don’t. When my son was little he believed in magic. We bought him a magic kit, which had a small magic wand and he was convinced that if he waved that wand around, some magic would happen and the wand would bend but no matter how hard he tried or how hard we looked, that wand stayed the way it was. To this day I still remember his disappointment that the magic didn’t work.
And why am I telling you this? Because this mousse is magic. You place it in a mixer and the magic happens before your eyes. You won’t believe how fluffy it gets. It’s like magic! You won’t get it by reading the recipe since there are only three ingredients, but trust me, this mousse is amazing in both flavor and texture.

Roni Venezia’s recipe

Strong mixer with a large bowl
12 individual ramekins or similar serving dish

Ingredients:

500 grams strawberries
1 cup sugar (to taste)
1 egg white

Optional:
100 grams white chocolate
5 Tbsp whipping cream
80 grams milk chocolate, grated

Preparation:

  1. 1. Cut the strawberries into small-medium pieces.

2. Place the strawberries and sugar in the bowl of a mixer and add the egg white. Turn the mixer speed on high and whip for around 5-6 minutes until the mousse gets super fluffy! The mousse should fill the bowl and be stiff.

3. Fill a piping bag and pipe into the ramekins/serving cups. Freeze for a few hours.

4. The mousse is great as is. If you want, though, you can break up the chocolate into pieces, place in a bowl with the cream and melt in the microwave. Spoon a layer of chocolate sauce on to each mousse and return to the freezer.

*5. Place in the fridge around 40 minutes before serving and sprinkle with grated chocolate.

Good to know…
You can make a few days in advanced and keep in the freezer. It’s really important that you use a strong mixer and whip into a stiff mousse. It’s best to keep in the freezer.
