

Apple cake recipe
This is the most popular apple cake on the site and I personally think it’s the best cake on the site. It takes 5 minutes to prepare and then into the oven it goes. No need for fancy equipment or mixers, super easy.
If you make it once, you’ll keep making it over and over again.
The cake is really addictive; you’re going to love it!
Yields one 24 cm round cake or 2 loaf pan cakes
Ingredients:
Bowl A:
4 large apples / 6 small apples
2 heaping tablespoons light brown sugar (demerara)
Bowl B:
4 large eggs
180 g sugar (~ 1 cup minus 1 tablespoon)
1 heaping teaspoon ground cinnamon
180 mL canola oil (3/4 cup)
280 g flour (2 cups)
2 teaspoons baking powder
Preparation:
1. Preheat the oven to 180°C (350°F) about 10 minutes in advance.
2. Peel the apples, cut them into small cubes, and place them in a bowl (Bowl A). Add the brown sugar, mix, and set aside.
3. In a separate bowl (Bowl B), whisk the eggs and sugar with a fork for a few seconds. Gradually fold in the apples (Bowl A), oil, flour,
and cinnamon, mixing everything into a smooth batter with a spoon. The batter will be thick, and that’s okay – it should be that way.
4. Transfer the batter to a greased pan and spread it evenly.
5. Place the pan in the oven and bake for about 45 minutes, or until the cake is firm, golden, and a toothpick comes out clean.
