Apple walnut cake
I’m always surprised by how amazing this cake is, despite the fact that it only took me 5 minutes to prepare. The oven does the rest. The result is a perfect, easy homemade cake, a winning apple cake recipe!
One 24 cm cake pan / two English cake pans / 20×30 cm rectangular pan
Ingredients:
4 large eggs
200 grams sugar (1 cup)
4 large green apples
180 ml oil (3/4 cup)
60 ml orange juice (1/4 cup)
1 tsp cinnamon
50 grams chopped / crushed walnuts
240 grams self-raising flour (2 cups minus 4 Tbsp)
Preparation:
1. Preheat an oven to 180°C.
2. Peel the apples and finely dice. Place in a mixer and add the other ingredients, adding the walnuts and the flour at the end. Mix on low speed until well incorporated.
3. Evenly transfer to a greased pan and bake for 40 minutes until the cake is set and golden.
Good to know…
You can make this up to two days in advance and keep in the fridge. On hot days it’s best kept refrigerated. You can make the cake in a bowl and mix with a spoon. It’s not essential to peel the apples. You can leave the nuts out and use self-raising flour. You can use any type of apple you have at home. Freezer friendly.
