Baked Cheese Pancakes

I make pancakes all year round; it’s a lovely supper for children. They get the pancakes along with some vegetables and an omelet. They enjoy every bite. A pancake doesn’t have to be sweet; it can also be a savory dish: you can mix in different types of cheeses, fill up the holes and the oven will do the rest. There is no frying!

18 pancakes

Ingredients:

2 eggs
1 cup of milk
4 spoons oil
3/4 tsp. salt
1 1/4 cups flour
2 slices grated yellow cheese
50 gr. grated feta cheese
2 tsp. baking powder

Preparation:

1. Preheat the oven to 180°C

2. Whisk the eggs, add the milk and the oil slowly, add the cheeses and the flour and the baking powder last with minimum mixing.

3. Put 1 1/2 spoons of the mixture into every hole and bake in the oven for 20 minutes or until the bottom becomes yellow

I assume when you says “holes” you mean “use a muffin tin”?
