150g softened butter
150g brown sugar Demerara (three quarters of a cup)
1 egg L
200g Quaker (fine rolled oats) almost 2 cups
90g flour (half a cup + 2 tablespoons)
Half a teaspoon of baking soda
A teaspoon of vanilla extract
Half a cup of white/dark chocolate chips
Preparation:
1. In the mixer bowl, beat butter, sugar and vanilla on medium speed until you get an airy mixture. It looks like a white paste and takes about two minutes. Stop. Add the egg. Continue beating for about two minutes until the egg is absorbed into the butter. Stop using a ladle to collect the mixture that has stuck to the sides of the bowl. Turn on the mixer for another minute.
2. Add the flour, baking soda and Quaker. Mix until everything is uniform. Add the chocolate chips. Mix briefly and stop.
3. Preheat oven to 180 degrees and place baking paper in a pan.
4. Wet your hands. Make small balls. Place them at intervals in the pan. Bake for about 10 minutes. Cool. Do not touch before.
