Makes approximately 20 fritters
Ingredients:
1 small cauliflower (500–600 g)
2 large carrots, grated
1 onion, finely diced
2 eggs
70 g flour (½ cup) or breadcrumbs
⅓ teaspoon black pepper
1 teaspoon salt
Preparation:
1. Cook the cauliflower:
● Bring a pot of salted water to a boil. Separate the cauliflower into
florets and cook them for 10–15 minutes, or until a knife easily slices
the stems. Remove it from heat and allow to cool slightly.
2. Prepare the mixture:
● While the cauliflower is cooking, heat a skillet with 2 tablespoons of oil
and sauté the diced onion until golden. Transfer the cooked onion to a
large mixing bowl. Finely chop or mash the softened cauliflower and
add it to the bowl along with the remaining ingredients. Mix well to
combine.
3. Choose one of two options:
● Frying Option: Heat a skillet with 3–4 tablespoons of oil. Roll the
mixture into patties, flattening them slightly. Fry the fritters on both
sides until golden brown. Transfer to a plate lined with paper towels to
absorb excess oil.
● Baking Option: Preheat the oven to 180°C (350°F). Line a baking sheet
with parchment paper and generously grease it. Arrange the fritters on
the sheet and bake for 30 minutes, or until golden on one side (do not
flip them before 30 minutes). Flip and bake for an additional 15
minutes until fully golden.
