Boneless chicken thighs with corn

I always get asked how I manage to cook fresh food for the kids every day. I don’t do anything special or complicated. I use recipes I’m familiar with that don’t take long to prepare, usually under 10 minutes, and with ingredients I almost always have on hand at home.
People don’t understand when I find the time to cook.
I prefer to keep a few secrets up my sleeve. Not everyone needs to know that it hardly took me any time or effort.
Here’s an easy recipe that uses boneless skinless chicken thighs. My kids love it. There’s something about the combination of chicken thighs and corn that kids can’t resist.

Makes 4 servings

Ingredients:

2 onions
1 cup corn kernels
600 grams boneless skinless chicken thighs
1/4 cup olive oil
1 Tbsp sweet paprika
1 Tbsp honey
1 Tbsp chicken bouillon
Ground black pepper
Salt

Preparation:

1. Cut the chicken thighs into small pieces and place in a bowl. Add the oil and spices and mix well. Set aside.

2. Cut the onion in half and slice thinly. Place 3 Tbsp of oil in a pan and sauté the onion until golden.

*3. Add the chicken thighs on high heat and sauté for 10-12 minutes while stirring until the chicken is cooked through. Add the corn and sauté for another minute. Then add the honey and mix. Taste and adjust seasoning if necessary.

Good to know…
You can substitute the chicken thighs with chicken breast. Your kids don’t like onions? Leave them out. Make sure that the chicken thighs are diced finely, they’ll be ready faster and easier to eat. Don’t have any corn? Make it without.
