Brownie cookies
Chocolate cookies for chocolate addicts. There’s no such thing as too much chocolate and I always love adding chocolate to cookies, so you can taste it in every bite.Easy, indulgent, and addictive chocolate cookies! Makes 40 cookies
Ingredients:
50 grams bittersweet chocolate
1 Tbsp oil
100 grams butter
180 grams sugar (1 cup minus 1 Tbsp)
1 egg
1/2 tsp baking soda
2 Tbsp cocoa powder
1 heaped Tbsp chocolate drink mix powder
240 grams flour (2 cups minus 4 Tbsp)
Preparation:
1. Break up the chocolate into squares and place in a bowl. Add the oil and melt together in the microwave. Mix until well combined. Set aside.
2. Place the butter and sugar in the bowl of a mixer and cream together for around two minutes using the paddle attachment. Add the egg and continue beating until incorporated. Add the baking soda, cocoa powder and chocolate drink mix powder and mix until you get a brown dough. Then add the melted chocolate, mix for a few seconds and then add the flour.
3. Preheat an oven to 180°C.
4. Prepare small balls, 12 grams a piece. Arrange on a baking tray and bake for 9 minutes. The surface of the cookies will crack and they’ll still be soft but will harden and flatten as they cool. Let cool without touching.
