Cheesy Pancakes

Do you also associate pancakes with sweet flavors? Usually topped with maple syrup, chocolate syrup, and lots of other goodies…that isn’t the case this time. This time I wanted a savory cheesy pancake.
One that was also soft and fluffy and delicious. I wanted to make something tasty for supper, served with lots of vegetables and an assortment of cheeses.
Made with ingredients that most people always have on hand, this is a super easy recipe that anyone can make and get golden, soft, delicious cheesy pancakes that are a delight to eat.

Makes approximately 20 pancakes

Ingredients:

2 large eggs
300 grams soft white cheese
60 ml milk (1/4 cup)
70 grams grated cheese of choice
1/2 tsp baking soda
180 grams flour (1.5 cups minus 3 Tbsp)
Ground black pepper
1 tsp salt

Preparation:

1. Mix all the ingredients together and fill a piping bag. Pipe the pancakes into a pan and fry until golden on both sides. Remove to a plate lined with paper towel.

2. You can also just drop the batter from a spoon.

Best served with sundried tomatoes in olive oil, this incredible sour cream dip and chives.
These are best made fresh but if you decide to make them ahead of time then reheat in the microwave before serving.
