Chicken and potatoes that kids love

This is totally a weekend family dinner recipe. Classic for a Friday night meal, a tray full of chicken and potatoes.
An easy and super tasty recipe that doesn’t require any special preparations.
The potatoes come out soft and tasty and they soak up the flavor from the chicken. I usually taste the potatoes straight from the oven, I can’t resist.

 

Makes 4 servings

Ingredients:

3 chicken legs + 3 chicken thighs
5 potatoes
2 Tbsp ketchup
2 Tbsp honey
4 Tbsp oil
1 Tbsp soy sauce
1 Tbsp chicken bouillon
Ground black pepper
Salt

Preparation:

1. Preheat an oven to 190°C.

2. Bring a pot of salted water to a boil. Cut the potatoes into thick wedges and cook them for 5-6 minutes in the water, then drain.

3. Season the chicken thoroughly, arrange in one layer on a large baking tray. Season the potatoes with what’s left of the chicken seasoning and gently add to the tray.

4. Bake for around an hour, check that the potatoes are soft.

Good to know…
If you have the time, marinate for an hour before baking. Here’s another way to bake without pre-cooking the potatoes. Preheat an oven to 200°C, sprinkle the potatoes on a baking tray lined with parchment paper. Drizzle with oil and sprinkle with salt and bake for 20 minutes.
The lower the heat and push the potatoes aside. Add the chicken pieces and bake for another hour. Not freezer friendly.
