Chicken and potatoes
Every mother has her favorite recipes, and this is one of mine, It’s easy to prepare and delicious and fun to eat.
The sauce is so yummy!
This is a simple recipe that makes a perfect family meal.
I serve it with Israeli couscous or rice and I enjoy seeing the kids clean their plates and shower me with compliments.
Ingredients:
4 drumsticks + 4 chicken thighs
2 onions
4 potatoes
2 tsp minced garlic
2 level Tbsp paprika
1 Tbsp soy sauce
1/2 tsp cumin
1 Tbsp chicken bouillon
Ground black pepper
Salt (if needed, to taste)
Preparation:
1. Place the chicken in a bowl and add the paprika, cumin and 3 Tbsp of canola oil. Mix until well combined and the chicken is nicely seasoned.
2. Place 2 Tbsp of oil in a pot. Dice the onions and sauté until golden. Place the chicken on top. Add 2 cups of water to the bowl you used to season the chicken, mix together and add to the pot.
3. Add the remaining seasoning and garlic to the pot. The water should cover 3/4 of the height of the chicken. Add more liquid if needed. Cook for half an hour, finely dice the potatoes, add to the pot and gently shake the pot so the potatoes are submerged in the sauce.
4. Cook on medium heat for around an hour and a half.
Good to know…
You can make this a day beforehand, it actually tastes better the day after. You can also add carrots, sweet potato, or use wings instead of the thighs/drumsticks.
