Chicken breast cooked in the microwave
Can you believe this dish only takes 10 minutes from prep to plate? Well, believe it. Chicken breast and veggies cooked in the microwave. No extra dishes and mess, and you won’t believe how tasty it comes out. Did you even know you could cook in the microwave? When I’m stressed for time I need to get food on the table fast. This ticks all the boxes, including taste.
Makes 3 servings
Ingredients:
1/2 kg chicken breast / boneless skinless chicken thighs cut into small chunks
For the marinade:
1 tsp paprika
1/2 tsp baking soda
1 Tbsp chicken bouillon
1 Tbsp honey
3 Tbsp oil
2 carrots
2 potatoes
3 Tbsp olive oil
Preparation:
1. Dice the onion. Heat 3 Tbsp of oil in a pot and add the onion. Sauté until golden. Chop the garlic and add to the pot.
2. Coarsely dice the sweet potato and add to the pot, along with the dried split peas, water, and spices.
3. Cook for around an hour until the split peas are soft.
4. Transfer the soup to a blender or food processor and blend until almost smooth. Or, use an immersion blender inside the pot.
*5. Return to the pot, taste and adjust seasoning if necessary. If it’s too thick, add a bit of water.
Good to know…
You don’t need to pre-soak the peas. Use split peas that haven’t been sitting around for a long time. They should be relatively fresh. This soup has a tendency to thicken up the longer it sits, so add water as needed when you reheat.
Don’t like sweet potato? Use regular potato instead.
