


Chicken Breast for Kids
What should we have for lunch? The kids are back at school and it’s time to start thinking about lunch again. A fast and easy recipe for chicken breast, no extra pots or pans or too much fuss, and the best part is that it’s delicious!
Makes 3-4 servings
Ingredients:
Marinade for the chicken breast:
1 heaped tsp paprika
1 tsp rotisserie chicken spice mix
1 tsp minced garlic
4 Tbsp olive oil
1 Tbsp chicken bouillon
2 onions
1 Tbsp chopped parsley
Preparation:
1. Cut the chicken into small pieces. Place in a bowl, add the spices and olive oil and mix well. Let marinate for half an hour.
2. Cut the onion in half and slice thinly. Place 3 Tbsp of oil in a pan and sauté the onion until golden. Remove 3 Tbsp of the fried onion and set aside. Add the chicken breast pieces and sauté on high heat for 7-8 minutes while stirring.
*3. Transfer to a serving plate, sprinkle the fried onion you set aside on top, and a small amount of chopped parsley.
Good to know…
You can substitute the breast with boneless skinless thighs, and if you don’t like onion you can leave it out. If you like onions, sprinkle some overtop before serving.
