Chicken breast with dried fruit
Yummy! I love to combine dried fruit and chicken breast. The sweetness of the fruit pairs really well with the chicken breast.
What’s great about chicken breast is how easy it is to prepare. If you want a recipe that’s relatively easy but looks like you went to a lot of trouble, then this is the one for you!
Have 15 – 20 minutes to spare? That’s all you’ll need here, and you can use any dried fruit you like.You’ll end up with a juicy and tender chicken breast and a sauce the tastes great with white rice.
Makes 4 servings
500 grams chicken breast
or 7 boneless skinless chicken thigh cutlets
For the marinade:
3 Tbsp olive oil
1 tsp paprika
1/2 tsp baking soda
1 large onion
2 cloves of garlic
1 cup dried fruit
(raisins, cranberries, dates, etc.)
1/2 tsp flour
1 Tbsp Moroccan paprika
1 Tbsp honey
1 Tbsp light brown sugar
3 Tbsp sweet red wine
1 tsp soy sauce
2 cups water
1 Tbsp chicken bouillon
Ground black pepper
1. Cut the chicken breast into strips, mix the marinade ingredients together and let marinate for around an hour. If you are using chicken thigh cutlets, then cut into three parts and you don’t have to marinate.
2. Finely dice the onion, heat a pan with 2-3 Tbsp of oil, and sauté the onion until slightly golden. Slice the garlic and add to onion. Sauté for a few more minutes, stirring occasionally. Add the flour and mix until dissolved.
3. Add the sugar and mix for a few seconds. Add the chicken pieces and sauté for a minute, then add the other ingredients. Cook for 10 minutes, stirring occasionally.
4. Add the dried fruit and cook for a few more minutes, them remove from the heat.
Good to know…
This is best prepared the day before or at least a few hours beforehand, the flavors blend better that way.
