Chicken soup with lentils and vegetables
This is a great soup filled with all sorts of good things.Tender veggies and lentils that just melt into the soup, and all with a delicious chicken soup base.
I also added a few serving suggestions in the post. Enjoy, you’re going to love this soup!
Makes 4 servings
4 chicken legs (option)
1 large onion
1/2 cup orange lentils
1.5 liters water
1 Tbsp cilantro
2-3 Tbsp parsley
1/2 tsp cumin
1 tsp turmeric
1/2 tsp sweet paprika
2 Tbsp chicken bouillon
Ground black pepper
1. Put 2 – 3 Tbsp of oil in a pot, add the chicken legs and sauté for a minute.
2. In the meantime, cut the vegetables into small pieces and add to the pot along with the other ingredients.
*3. Cook on medium heat for around an hour. Taste and adjust seasoning.
Good to know…
You can make this without the chicken, or substitute the chicken legs with 7- 8 wings. You can make this up to 2 days in advance.
