Chicken tender schnitzel
This is the best schnitzel recipe made with the most tender part of the breast. Imagine what a hit it will be with the kids. I know that the tenders are a bit more expensive than regular chicken breasts but sometimes you have to splurge a bit and here it’s really worth it.
This recipe is super tasty, makes a great lunch or supper. Add a few side dishes and you have a perfect family meal that everyone will love.
Makes 4 servings
Ingredients:
600 grams chicken breast tenders
2 eggs
1 tsp soy sauce
1 tsp paprika
1/3 tsp crushed chili flakes
1 tsp sweet chili sauce
1 Tbsp chicken bouillon
Breadcrumbs
1 tsp flour
Preparation:
1. I like slicing the tenders down the middle for a thinner schnitzel, but you don’t have to if you don’t want to.
2. In a deep dish, beat the eggs together with the other ingredients. Prepare another deep dish with the breadcrumbs and flour mixed together.
3. Heat a pan with 3-4 Tbsp of oil. Dip the tender in the egg mixture and then coat with the breadcrumbs. Fry on both sides until nice and golden. I recommend cleaning the pan after a couple of batches and then continuing.
Served with Spanish paella, tomato barley soup, cauliflower in sauce cooked in the microwave, dried tomatoes, broccoli fritters, and veggie fritters.
