Chicken with Cauliflower
This recipe is fantastic! I love the combination of the cauliflower in this delicious sauce. This is a one-pot meal that the entire family will love. It’s finger-licking good! The chicken flavors the cauliflower wonderfully, and the result is a simple and delicious meal.
Ingredients:
1 onion
1 kg chicken wings, halved
2 cloves of garlic
1 small cauliflower
1 cup peas and carrot (frozen)
1/2 spicy chili pepper
100 grams tomato paste
1 tsp sugar
1 Tbsp Moroccan paprika
1 Tbsp chicken bouillon
Ground black pepper
Salt (if needed, to tast
Preparation:
1. Add 5 Tbsp of oil to a hot pot, add the wings and sear on both sides for several minutes. Chop the onion and garlic and add to the pot. Sauté for around two minutes, stirring occasionally.
2. In the meantime, bring a pot of water to a boil, break up the cauliflower into florets and add to the pot. Cook for around 5 minutes, then drain.
3. Add the other ingredients to the pot, cover with water and cook for around 30 minutes on medium heat.
*4. Add the peas, carrots, and cauliflower to the pot, top up with water if necessary. Cook for around 20 minutes, giving the pot a shake every so often.
Good to know…
You can make this a day or two in advance. Best served with fresh bread to soak up the amazing sauce.
