Chocolate Chip Cookie Cheesecake Bars
There’s nothing like a good sponge cake, right? But when I want to make a real treat for the kids, I make these magical squares. You’re going to get completely addicted to this recipe. It’s easy, never fails, and tastes amazing. You can’t beat the combination of cheese and shortcrust dough, it’s simply the best!
This is one of those recipes that you simply have to make. Go on, then, head to the kitchen and treat your family to something they’ll love.
Ingredients:
200 grams butter
280 grams flour (2 cups)
150 grams sugar (3/4 cup)
1 tsp vanilla sugar
1 cup dark / white chocolate chips
1 Tbsp flour
For the cheese layer:
250 grams soft white cheese
100 grams sugar (1/2 cup)
1 egg
1 tsp vanilla sugar
Preparation:
1. Preheat an oven to 180°C.
2. Cut the butter into small cubes, place in a mixer and add the sugar and flour and start processing into a dough. When the dough starts to form, add the chocolate chips and process until it mostly comes together. Stop and gather into a ball.
3. Roll out 3/4 of the dough into a rectangle the size of the baking tray, preferably on parchment paper. Bake for 20-25 minutes until the dough is golden.
4. Mix the cheese, egg, sugar, and vanilla sugar. When the dough is golden, remove from the oven and pour the cheese mixture evenly over the crust. Return to the oven and bake for around 12 minutes until the cheese layer sets somewhat.
5. Add to the remaining dough 1 Tbsp flour and mix until you get a coarse crumb consistency. You can do this with your hands. Sprinkle the crumbs evenly over the cheese layer and put back in the oven.
6. Bake for 15 minutes or until the crumbs are golden.
7. Cool for a few hours before cutting into squares.
