Makes 70 cookies
200 grams bittersweet chocolate
100 grams butter
30 ml whipping cream (2 Tbsp)
1/2 tsp baking soda
2 large eggs
150 grams sugar (1 + 1/4 cups)
1 tsp vanilla extract
230 grams flour (1.5 cup + 2 Tbsp)
1. Preheat an oven to 180°C.
2. Break up the chocolate into squares and place in a bowl. Add the butter and melt together in the microwave. Mix until well combined. Add the cream and mix until incorporated.
3. Beat together the eggs and sugar for 10 seconds, lower the speed and slowly add the melted chocolate and beat until well combined. Add the baking soda, vanilla extract, and flour.
4. Two options:
Fill a piping bag and pipe small mounds with spaces in between them. A second option is to spoon small mounds.
6. Bake for 8 minutes. The cookies flatten out when they come out of the oven and they’re still soft. Wait until they cool.
