


Coffee Chicken Recipe
This recipe is finger licking good! The sauce really makes the recipe so special. The coffee adds a whole new dimension to the sauce. I know this sounds like a strange combination but trust me, it’s amazing. The coffee flavor doesn’t dominate at all, it just gives an interesting and added dimension to the flavor. This is one of my favorite Friday night recipes. My whole family loves the tender chicken, and especially the incredible sauce.
Makes 3-4 servings
Ingredients:
3 chicken legs + 3 chicken thighs
2 onions
2 cloves of garlic
3 medium-sized long sweet potatoes / 4 potatoes
2 cups water
1 tsp instant coffee granules
2 Tbsp honey
1 Tbsp sweet paprika
2 tsp flour
1 Tbsp chicken bouillon
Ground black pepper
Salt
Preparation:
1. Dice the onion. Heat 2 Tbsp of oil in a pan and add the onion. Sauté until it starts to get golden. Chop the garlic and add to the onion to sauté.
2. Add the coffee, spices and honey. Make a slurry with water and flour and add to the pot to cook for a few minutes. Add the chicken + 1 more cup of water. Bring to a boil and lower the heat. The water should reach about 3/4 of the height of the chicken. Partially cover and cook on medium heat for around one hour.
3. Finely dice the sweet potatoes / potatoes and add to the pot. Shake the pot a bit so that the pieces submerge in the sauce and add a bit more water if necessary.
4. Cook for 40 minutes, gently shaking the pot occasionally. The potatoes should be soft.
Such an incredible sauce!
