Coffee mascarpone ice cream recipe
Let me tell you, this is incredibly tasty!
It only takes 5 minutes to make. Sometimes I ask myself how it’s possible that something that takes so little time to prepare can taste so amazing?
I love to combine coffee in desserts, even people that don’t like coffee like the taste. I made a combination of mascarpone cheese and coffee and it was finger-licking good! It’s great as ice cream but you can also serve it as a mousse. It’s super easy to prepare and such a treat on hot summer days.
Makes 13 small 60 ml cups
Ingredients:
250 grams mascarpone cheese
200 ml sweetened condensed milk
100 grams sugar (1/2 cup)
1 tsp instant coffee granules
375 ml whipping cream (1.5 cups)
20 grams instant vanilla pudding powder mix (1 Tbsp)
40 g sugar (2 Tbsp)
Preparation:
1. Place the mascarpone in the bowl of a mixer and whip for a few seconds, then add the sweetened condensed milk, sugar, and instant coffee granules and whip for two minutes on medium speed. Transfer to another bowl.
2. Now whip the cream, sugar, and instant pudding mix into a stable whipped cream, lower the speed of the mixer and add the mascarpone mixture, mixing until you get a stable mousse.
3. Fill a piping bag and pipe into the cups.
4. Freeze for one hour, or refrigerate.
Good to know…
Everything gets whipped together, you don’t need to fold one into the other. The condensed milk is essential to the recipe. I decorated the ice cream with coffee beans.
