Crustless Onion Quiche
I’ve always loved a good onion quiche, and this is a fantastic recipe for one.
It’s easy to make, you only need one bowl, and served with a side salad it makes a perfect meal. Great for lunch or dinner. Warm, golden, and moist, I’ve been making this quiche for years and I never tire of it!
20/24 x 30 cm baking dish
Ingredients:
5 large onions
4 large eggs
200 grams cottage cheese
6 Tbsp flour
3/4 tsp baking powder
50 grams butter
100 grams grated cheese of choice
50 grams grated goat’s cheese
Ground black pepper
1 tsp salt
Preparation:
1. Finely dice the onion. Place 5-6 Tbsp of oil in a large pan and sauté the onion while stirring constantly. Add the butter and continue sautéing until the onion starts to get a bit golden.
2. Place all the ingredients in a bowl, including the sautéed onion, and mix until well combined.
3. Preheat an oven to 180°C.
4. Grease the baking pan and pour the batter in an even layer. Bake for around 50 minutes or until the quiche is golden and set.
