


Dairy free apple cake recipe
It’s Friday, Shabbat is almost here, and I still haven’t made a cake. It was obvious to me that I would make an apple cake because it’s one of my favorites.
It’s not just about the taste but also how easy it is to make and the fact that it doesn’t require any special ingredients. It takes 5 minutes to prepare and then into the oven it goes. Then you can sit back and enjoy the incredible smells wafting through the kitchen while the cake bakes, and when it’s out you have a warm and wonderful apple cake. And the best part? It only takes 5 minutes to prepare and then into the oven it goes.
A 26 cm baking pan
Ingredients:
5 large eggs
300 grams sugar (1+1/4 cups)
5 apples
240 ml oil (1 cup)
350 grams flour (2.5 cups)
1 heaped tsp cinnamon
2.5 tsp baking powder
Preparation:
1. Preheat an oven to 180°C.
2. Dice the apples. No need to peel them first.
3. Place the eggs and sugar in the bowl of a mixer and beat together on high speed for around 1 minute. Lower the speed and add the apples, oil, flour and baking powder. Beat on low speed until well incorporated.
4. Transfer to a greased baking tin and bake for around 45 minutes or until a toothpick inserted in the middle comes out clean.
Good to know…
You don’t have to peel the apples. The cake is freezer-friendly. You can make it without a mixer, just beat everything manually with a whisk or fork
