Dairy free hamantaschen
Hurray for Purim, which is just around the corner, heralding the arrival of the beloved hamantaschen cookie! The sweetish dough and delicious filling are a favorite treat among adults and children alike.
You can use your favorite filling here, from poppyseed to nuts, Lotus spread or jam. The dough is super easy to work with and you can adopt it to make simple cookies that don’t even require a filling.
Because of the current state of affairs, with the pandemic and all, most of us are spending a lot more time at home and need to find ways to keep the kids busy since they haven’t gone back to school yet.
That’s why I chose this dough because it’s easy for the kids to work with and keeps them occupied for close to an hour. Also, the hamentashen are delicious. Have I mentioned that they are dairy-free?

Makes 30 hamantaschen
Ingredients:
1 egg
100 grams sugar (1/2 cup)
1 tsp instant vanilla pudding powder mix
60 ml water (1/4 cup)
80 ml oil (1/3 cup)
350 grams flour (2.5 cups)
Chocolate spread / any filling you like
Preparation:
1. In a standing mixer, process the ingredients into a dough using the paddle attachment. Roll out the dough and cut out 6 cm diameter circles. Use a teaspoon or piping bag to add a bit of the chocolate spread / filling of choice and pinch the sides up into a triangle.
2. Preheat an oven to 180°C. Re-pinch all the corners and bake the hamentashen for around 15 minutes.
Good to know…
You can freeze the hamentashen after they are baked and have cooled a bit, and you can also freeze them before baking.
