


Dairy-free mashed potatoes
This mashed potato recipe is amazing! It has such a creamy texture that you’d think there was cream in the recipe. A classic side dish to serve with the kid’s schnitzel. You’ll have a hard time portion controlling yourself, it’s so yummy. Don’t forget to garnish with the fried onion, it takes the dish to the next level!
Makes 3-4 servings
Ingredients:
5 medium potatoes
1/2 cup water (the same water you used to boil the potatoes in)
1 Tbsp oil
1 tsp salt
2 medium onions
Preparation:
2. Roughly mash the potatoes and then transfer to a food processor along with the water, oil, and salt. Blend for around one minute until the mashed potatoes are soft and creamy and there are no lumps. Taste and adjust seasoning.
3. Transfer to a serving dish and smoothen out.
4. Heat a pan with 2 Tbsp of oil, halve the onion and slice thinly and fry until golden, stirring occasionally. It takes a few minutes.
5. Sprinkle a generous amount of fried onion over the mashed potatoes.
Dig in!
Served with chicken breast meatballs and vegetables.
