Easy apple cake recipe
This is a really great cake. It’s so easy to make, no creams or meringues, no extra bowls or utensils, which makes clean up so easy! Mix with a spoon and straight to the oven, it doesn’t get easier than this. And the taste? A-M-A-Z-I-N-G. There’s no way that this won’t get devoured as soon as it’s out of the oven.
English cake / 18 cm Bundt pan
Ingredients:
2 large eggs
2 large apples
2 Tbsp brown sugar
1 tsp cinnamon
140 grams flour (1 cup)
200 grams sugar (1 cup)
120 ml oil (1/2 cup)
Pinch of salt
Preparation:
1. Finely dice the apples and mix with the cinnamon and the white sugar.
2. Preheat an oven to 180°C.
3. Beat the eggs and brown sugar with a fork, add the other ingredients, including the apples, mix the batter until well combined. It’ll be thick and a bit hard to stir.
4. Evenly transfer the batter to a greased cake pan. Bake in the oven for around 40 minutes or until the cake is set and golden.
Good to know…
On hot days, keep the cake in the fridge. Freezer-friendly. You can make it a day or two in advance.
The cake is really tasty and I’m not exaggerating. It’s one of the best apple cakes I’ve made.
