


Easy chocolate chip cookies
These cookies are super addictive. I’m warning you that you won’t be able to have just one, and before you know they’ll be all gone and you’ll have to make another batch. Good thing it only takes a few minutes to make them. Easy and indulgent cookies that everyone loves.
Makes 32 cookies
Ingredients:
100 grams butter
100 grams sugar (1/2 cup)
1/3 cup demerara sugar
1 egg
1/2 tsp baking soda
140 grams flour (cup)
45 grams ground coconut (1/2 cup)
1/3 cup brown chocolate chips
1/3 cup white chocolate chips
Preparation:
1. Take the butter out of the fridge around 15 minutes before you start making the cookies. Place in a mixer together with the sugars and beat for around 2 minutes on medium speed.
2. Add the egg and mix for a few seconds until well incorporated, then add the baking soda. Add the flour and the coconut, and finally the chocolate chips
3. Preheat an oven to 180°C.
*4. Line a baking tray with parchment paper. Make small balls from the dough and arrange on the baking tray, ensuring you leave spaces in between the balls. Bake for 10 minutes or until the bottom goes golden. The cookies will flatten out during baking. The cookies come out of the oven soft, and harden while they cool.
Good to know…
You can keep the cookies in a closed container or jar for 3-4 days at room temperature. You can replace the coconut with the same amount of flour.
