


Eggplant rolls with cheese
This is an ideal dish for eggplant lovers: very thin slices of eggplant in a tomato sauce and slices of yellow cheese on top. Sounds simple and it is indeed easy and simple.
It is a wonderful dish for dinner guests and a lovely treat for the family. The only problem is that I cannot abstain myself and I must eat it the moment it comes out of the oven; therefore I should remember to prepare a big quantity so that the guests should get enough and not complain.
Ingredients:
1 big elongated eggplant
Fried chopped onions
Thick stripes of yellow cheese
Tomato Sauce, easy and simple or Ketchup:
Small tomato puree (100 gr.)
2 spoons olive oil
1/3 tsp. sugar
Diced black pepper
Salt
Preparation:
1. Cut the eggplant in length in thin slices; roast the slices and let cool.
2. Preheat the oven to 180°C
3. Mix onion, puree, sugar, oil and spices and rub on the eggplant slices in thin layer.
4. Put yellow cheese on top, roll gently and put into the oven for several more minutes until the cheese melts.
