Eggplant salad with tomatoes
A great salad. It is wonderful for holiday dinner parties. Best-served with home made bread. It is so good you can not stop eating.
1 big onion
1 packet of sliced Champignon Mushrooms
2 eggplants cut into cubes (don’t peel)
3 tomatoes cut into cubes
1/2 cup water
1 spoon Paprika
Sugar according to taste
Diced black pepper
1. Fry the onion until it turns yellow add the mushrooms.
2. Add the eggplant cubes and fry until they get soft, then add the tomatoes which should also become soft.
3. Add water and spices and cook until everything is soft.
Serve with good bread on the side…
