Eggplant Slices with Tomato Sauce
Eggplants and tomatoes are a magical combination. I must thank my husband for his love for eggplants. Until I met him I had pretty much ignored them.Since I met him he taught me to appreciate eggplants as well and I now I can’t live without them.
1 big elongated eggplant cut into slices
5 tomatoes cut into small cubes
1 red pepper cut into cubes
1 medium-sized chopped onion
1 spoon Paprika
1 tsp. sugar
1 1/2-2 cups water
Diced black pepper
1. Preheat the oven to 180°C
2. Coat the pan with oily baking paper, dreazl olive oil on the eggplant slices and season with salt and pepper.bake for 20 minutes or until the eggplant becomes soft and golden
4. Fry the onion, add the rest of the ingredients and cook for 10 -15 minutes.
5. Arrange slices of eggplant in the pan, pour tomato sauce on top and bake for 25 minutes at 180°C
