


Fattoush salad with cheese
The problem with this salad is that the crunchy pita croutons are so addictive, it’s really hard to control yourself. It’s the best part of the salad! Make a lot of the croutons, they go really well here.
Makes 4 servings
Ingredients:
300 grams baby leaves
20 yellow cherry tomatoes
20 red cherry tomatoes
2 pita breads
Kalamata olives
Mozzarella balls or sticks
Purple onion
Two green onions
Olive oil
Salt
To season the pita:
4-5 Tbsp olive oil / canola oil
3/4 tsp za’atar
1/2 tsp paprika

Preparation:
1. Cut the pita breads into small cubes, add the seasoning and mix well.
2. Heat a dry pan and add the pita cubes, toasting them for a few minutes until golden. Shake the pan around occasionally.
3. Halve the cherry tomatoes, slice the onions thinly, cut the mozzarella into cubes and add all the ingredients to a large bowl. Season with olive oil and salt, sprinkle the pita croutons and drizzle with some more olive oil.
Another option for a sweet dressing
5-6 Tbsp olive oil
1 tsp minced garlic
1 heaped tsp honey
3/4 tsp mustard
Ground black pepper
Salt
