Makes 3 long focaccias
Ingredients:
350 grams flour (2.5 cups)
11 grams dry yeast / 25 grams fresh yeast
1 tsp sugar
1 tsp salt
60 ml olive oil (1/4 cup)
180 ml hot water (3/4 cup)
Olive oil
Rock salt
Preparation:
1. Place the flour and yeast in the bowl of a mixer. Mix together and add the sugar, salt, oil, and water. Knead into a soft smooth dough, place in a greased bowl and cover. Let rise around 45 minutes.
2. Divide the dough into three parts. Roll each part into a ball and let rise for another 20 minutes.
3. Pull each ball flat to a length of around 30 cm and place on a baking tray lined with parchment paper. Wait ten minutes and then poke the dough all over with your fingertips.
4. Heat an oven to 225°C.
5. Drizzle olive oil over the focaccia and sprinkle some rock salt. Bake for around 20 minutes or until golden.
*6. Devour. These are amazing.
