Gnocchi with green beans
This is such a fresh and yummy dish! The crunchy green beans work really well here with the other ingredients.
I recommend always keeping a bag of frozen green beans at home. They make a great addition to any meal. I added some gnocchi to make the dish more substantial, and to liven up the flavors and colors I added some sweet cherry tomatoes and hints of garlic. Delicious!
One of the great things about this dish is how quickly it all comes together. It takes 10-15 minutes from pan to table. You’re going to love it.
Makes 3-4 servings
Ingredients:
250 grams gnocchi
250 grams green / yellow beans
15 – 20 cherry tomatoes, halved
2 Tbsp honey
2 cloves of garlic
1 Tbsp chicken bouillon
1/3 tsp ground black pepper
Salt (if needed, to taste)
Preparation:
1. Bring a pot of water to a boil and cook the green beans until tender crisp, around 5 minutes, then drain.
2. Bring another pot of water to a boil with 3/4 tsp salt and add the gnocchi. Cook until soft and float to the surface of the water, around 5-7 minutes, then drain.
3. Slice the garlic, heat a pan with 3 Tbsp of oil and sauté the garlic until fragrant. Halve the cherry tomatoes and add to the pan, sautéing for another two minutes, stirring occasionally.
4. Add the green beans and sauté for around two minutes. Then add the honey and seasoning, cook for another minute and turn off the heat.
