Grilled eggplant and balsamic vinegar
Sometimes we fancy something light because we are not too hungry, but we crave for a snack. So the general direction is vegetables, as little oil as possible, some tomatoes, good cheese; it sounds simple but it is extremely tasty! Sometimes you have such a snack, you eat some good bread with it and think that life is beautiful.
1 big sliced and cut into halves egg-plant
20 cherry tomatoes cut in halves
70 gr. crumbled Feta Cheese
Chopped green onion
1. Preheat the oven to 180°C
2. Roast the egg-plant in the oven, put salt and pepper on the tomatoes and bake for 15 minutes
3. Put the egg-plant and the tomatoes on a serving plate, sprinkle cheese crumbs, green onion, and drizzle balsamic vinegar.
