Honey cake

A winning recipe for a wonderful cake. It’s super moist and tastes like a real old-fashioned honey cake. The color is also incredible. The combination of the honey or silan and the cinnamon gives the cake its amazing flavor and color.  So easy, it took me only 5 minutes to prepare and the oven did the rest!
It smells amazing, and it’s such a joy to eat warm fresh honey cake.

A 24 cm baking pan / 20×30 medium sized pan

Ingredients:

4 large eggs
150 grams sugar
180 ml oil (3/4 cup)
1 cup honey / silan (date honey)
240 ml strong prepared tea
280 grams flour (2 cups)
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon

Preparation:

1. Preheat an oven to 180°C.

2. Prepare a cup of tea as you like, set aside for 5 minutes with the teabag in. Remove the teabag and wait 15 minutes until the tea cools somewhat.

3. Place the eggs and sugar in the bowl of a mixer and beat on low speed for a few seconds, then slowly drizzle in the oil, tea, and honey

4. Add the flour, baking powder, baking soda and cinnamon and beat on low speed until well incorporated.

5. Grease a baking tin and pour in the batter and bake for around 45 minutes or until a toothpick inserted in the center comes out clean. The cake should be set and have a beautiful color.

Good to know…
You can make this without a mixer, just be sure to mix everything well. It’s obviously easier to do it with a mixer. Don’t leave the baking soda out. Freezer-friendly. You can make it up to two days in advance

לא מצאתי באתר בעברית מקום להשאיר תגובה, אז סורי.
רציתי לשאול:
1. כמה ביצים לשים אם יש לי רק ביצים מדיום?
2. מה את ממליצה כדי שהעוגה תצא באמת גבוהה ותישאר גבוהה אחרי האפייה?
ראיתי שממליצים לשים באמצע התנור בלי המאוורר, ועדיין הן תמיד צונחות לי, מה יכולה להיות הסיבה?
