Ice cream cookies
Is there such a thing as ice cream cookies? It turns out that there is, and they are amazing! My children demolished every last cookie and asked me to make them again.
The summer holiday has begun and parents are thinking about how they can keep their kids busy. These cookies are the perfect solution! The kids get on with it themselves and enjoy every minute. The ice cream in the recipe adds a wonderful flavor.
Ingredients:
100g cold butter, cut into small cubes
280g (2 cups) flour
200g (1 cup) regular sugar
1/3 cup soft vanilla ice cream (I recommend Strauss’s Cremisimo)
2 tablespoons milk
Preparation:
1. Work all the ingredients together into a pastry.
2. Roll out and cut into shapes.
3. Place on baking tray.
4. Bake on a medium heat (180°) until golden.
5. Fill the cookie jar and see how your children demolish them, without leaving a single crumb!
Such a great dough, and a real pleasure to work with.
