Makes 30 large cookies
Ingredients:
1 egg
100 grams sugar (1/2 cup)
1 Tbsp instant vanilla pudding powder mix
60 ml juice orange (1/4 cup)
80 ml oil (1/3 cup)
350 grams flour (2.5 cups)
2 Tbsp sesame seeds
2.5 tsp baking powder
Preparation:
1. In the bowl of a mixer, whisk together the egg and sugar for around 20 seconds. Add the pudding powder and whisk for a few more seconds.
2. Change the attachment to a paddle one and mix on low speed while adding the orange juice and oil, and finally add the sesame seeds, flour and baking powder. Mix until well combined.
3. Meanwhile, preheat an oven to 180°C.
4. Roll out the dough to 2-3 mm thickness and cut out cookie shapes or cut into rectangles. Use a fork to perforate the cookies and arrange them on a baking tray with spaces in between. Bake for 15 minutes until golden, then let cool.
Good to know…
Baking time depends on the size of the cookies. The larger they are they longer they take to bake.
