


Israeli couscous with carrots
So easy and yet so tasty, One minute of prep time and ten minutes of cook time and it’s ready to be served! Easy as can be. Life is great when you have easy recipes, This is one of my kids’ favorites.
Makes 4 servings
Ingredients:
2 cups pearl couscous / Israeli couscous
2 carrots
1 onion
3 cups water
2 tsp salt
Preparation:
1. Bring 3 cups of water to a boil.
2. Coarsely grate the carrot.
3. Pour 3-2 Tbsp of oil into a heated pan. Add the carrot and sauté for around two minutes while stirring. Finely chop the onion and add to the carrot. Sauté for another minute.
*4. Add the Israeli couscous, boiling water, salt, and bring to another boil. Cover and reduce heat. Cook for 5 minutes and leave covered for an additional 5 minutes.
Good to know…
You can leave out the onion if you don’t like onion. You can also make this a day in advance. Want to know a good trick? Once the couscous is ready they solidify and cool. If you break it apart with your hands they won’t stick together again.
Serve with breadsticks + onion and mushroom soup
