

Kid friendly corn fritters
I love easy recipes that make my kids smile.
I’d rather not complicate things. I prefer recipes where everything goes in one bowl or one pan and that the entire family enjoys. I’m not asking for too much, right? Corn fritters are just that. They took me 10 minutes to prepare, mix and fry, and I got a heap of soft golden fritters.
Both the kids and I loved these fritters.
Corn pairs really well with good cheese, and everyone at my house agreed that these were delicious. I think these make a perfect dinner when served with vegetables and homemade cream cheese.
Makes 30 fritters
Ingredients:
335 grams corn (2 cups)
2 eggs
200 grams 9% soft white cheese (4 Tbsp)
3 Tbsp cream / milk
40 grams grated cheese of choice
100 grams flour (1/2 cup + 3 Tbsp)
1 tsp salt
Preparation:
1. Put all the ingredients in one large bowl and mix until incorporated.
2. Heat 3-4 Tbsp of oil in a pan and place 2 tsp of the batter in the pan. Flatten slightly and repeat until the pan is full of fritters. Fry until the bottoms are golden. Flip and fry the other side until golden as well.
3. Prepare a plate lined with paper towels and transfer the fritters.
4. To bake: . Preheat an oven to 180°C. Grease parchment paper and drop heaped tablespoons of the batter in evenly spaced intervals. Flatten slightly and bake for around 15 – 20 minutes until golden And then flip. Bake for another 10 minutes.
Served with pizza croissant, cream cheese and dried tomatoes.
Good to know…
There’s no substitute for the cheese. You can use frozen or canned corn. You can add green onions or chives. They work really well in the recipe. You can prepare these a day before.
