Large chocolate birthday cake

People often ask me for a recipe for a large cake they can take to their kid’s kindergarten or school that will be big enough for every kid to get a generous slice. Don’t forget about the teacher, she also deserves to have her share of the cake!
I looked for the best recipe that would fill the largest disposable tin and still come out high and fluffy. It came time for me to bake a birthday cake for my little princess.
Of course I worked according to the strict instructions of a 7 year old girl that knew exactly what she wanted and didn’t even let me have a say in the matter. Happy birthday sweetheart! Did I mention that the cake can also be non-dairy?
It came out gorgeous and delicious. This recipe is definitely a keeper.

30 X 40 cm baking pan

Ingredients:

8 eggs
1 cup chocolate drink mix powder (like Nesquik)
300 grams sugar (1 /1/2 cups)
2 cups juice orange / 2 cups whipping cream
360 ml oil (1.5 cups)
560 grams self-raising flour (4 cups)

Chocolate frosting:
250 grams bittersweet chocolate
250 ml whipping cream (or non-dairy substitute)

Preparation:

1. Preheat an oven to 180°C.

2. Place the eggs and sugar in the bowl of a mixer and cream together on medium speed until you get a creamy and fluffy yellow mixture.

3. Lower the speed of the mixer and add the oil and the orange juice.

4. Add the chocolate drink mix powder and the flour and mix until well combined.

5. Pour the batter into the pan and bake in the oven for around 45 minutes or until the cake is set and a toothpick comes out clean.

*6. To prepare the chocolate cream:
Break up the chocolate into squares and place in a microwave safe bowl together with the cream. Microwave on high until melted, remove from the microwave and mix until blended. Pour evenly over the cake. The cake soaks up the frosting and comes out wonderful and moist.

Good to know…
The cake serves 35-40 kids. It can’t be made without the mixer. If you don’t have self-raising flour, you can use 4 cups of regular flour + 4 tsp of baking powder. The frosting is optional.
