*Leftover chicken sandwiches

Have you noticed that on Sundays I try and post recipes with leftover chicken? I’ve always got leftovers from Saturday that no one wants to eat, so this is the perfect recipe for leftovers.
It’s great! The kids devoured everything, I was so pleased with myself, it worked like a charm! Just remember that this was yesterday’s chicken that no one wanted to touch. I’ll tell you in confidence that not even I could hold back from eating these little sandwiches, they were so good!
I didn’t tell them that these were leftovers. I’ve learned to keep some things to myself.

Ingredients:

10 ready-made chicken breast meatballs
2 chicken thighs
2 onions
1/3 cup parsley
8 mini pitas

Preparation:

1. Finely chop the chicken balls, remove the chicken meat off the bone and chop finely.

2. Finely chop the onion. Add 3 Tbsp of oil to a pan and add the onion and sauté until golden. Add the chopped chicken, sauté for 2-3 minutes, add the parsley and remove from the heat.

3. Spread hummus inside the pita and fill with the chicken.

Another filling I made:
Fill a medium size pot with water, bring to a boil, add a kilo of halved chicken wings and 1 Tbsp of chicken bouillon, cook for 25 minutes, drain and cool. Remove the chicken meat off the bone and chop finely.
Now transfer to a pan and add 1 tsp of paprika and 1/2 tsp of rotisserie chicken spice and a pinch of chicken bouillon, stir for around a minute and remove from the heat. Fill the pitas with the mixture. You don’t even need to spread anything inside, these are delicious as is.

Served with pasta for kids and vegetable salad

Good to know…
In the above option I didn’t season the meat since it was already seasoned. You should first taste and then decide whether to add salt and pepper. In the second option I wanted the meat to have some color so I added seasoning. You can make the filling the day before and just before serving warm the meat and fill the pita breads.
