Lentil and noodle soup

Who can figure out men? I made a thick lentil soup full of good things. My husband comes in to the kitchen and announces that he doesn’t like lentils. I coaxed him to try it anyway. “Just remember that I don’t like lentils”, he repeats. “No problem”, I tell him, “noted”. I bring him a bowl full of hot soup and continue cooking.
Over my shoulder I hear him say “the soup is really good”. I fake surprise and say “even though you don’t like lentils?”  “Yes, it’s really tasty”. I left the kitchen and came back after a while, and guess what? The man who “doesn’t like lentils” devoured almost the entire pot… Men, go figure them out!

Ingredients:

1 medium onion
2 carrots
1 cup orange lentils
1/2 cup thin noodles
10 – 11 cups water
Chopped parsley
1 tsp turmeric
1/2 tsp cumin
Ground black pepper
Chicken bouillon
Salt

Preparation:

1. Finely dice the onion, heat a pot with 3 Tbsp of oil and sauté the onion until golden. Grate the carrot on the large holes of a grater and add to the onion.

2. Add the lentils, water, and spices, and bring to a boil and lower the heat. Cook for around 30 minutes.

*3. Add the noodles and cook for 5-6 more minutes. Taste and adjust seasoning.

Good to know…
You can make the soup without the noodles. You can also cook the noodles separately and add them to the soup when serving.
