Lentil Barley Soup
This is one of the heartiest soups I’ve made. It has vegetables, lentils and barley, and a comforting rich thick consistency that makes it a perfect meal on its own.
What I love about this soup is that everything goes in one pot and after an hour, the soup’s ready to be served, and I didn’t even have to work hard! The soup will fill your kitchen with amazing smells and your family will thank you for it. Get ready for a new winter favorite that will surely feature regularly on your meal rotation.
Makes 4-5 servings
Ingredients:
1/2 cup green lentils, pre-soaked for around half an hour in boiling water
1/2 cup pearl barley
1 onion
2 L water
2 carrots
3 cloves of garlic
1 tsp minced garlic
1/2 tsp turmeric
2 Tbsp chicken bouillon
Ground black pepper
Salt (if needed, to taste)
Preparation:
1. Finely dice the onion. Heat 2-3 Tbsp of oil in a pot and add the onion, sautéing around 2 minutes until lightly golden. Chop / slice the garlic and add to the pot, sautéing for another minute.
2. Finely dice the carrot and add to the onion. Add the lentils and barley, stir for a minute and add the other ingredients.
3. Cook for around one hour on medium heat, stirring occasionally.
